Raw Vegan Bloomed Wild Rice (Aquatic Grass) Recipe

Indulge in a raw vegan culinary delight with our bloomed wild rice recipe! Packed with flavor and nutrition, this dish is perfect for those seeking a healthy, plant-based meal option.

Our step-by-step guide will show you how to prepare and bloom wild rice to perfection, resulting in a satisfying and hearty meal that is sure to impress. Don’t miss out on this chewy goodness! You can add it to your salads or wraps or ANYTHING!

Base – Raw Vegan Wild Bloomed Rice Salad

1/2 cup – Chopped Tomatoes (4 ounces/120 grams)

1/2 cup – Chopped Cilantro (4 ounces/120 grams)

1 – Chopped, Seeded, Peeled Cucumber (8 ounces/240 grams)

1/2 – 3/4 cup – Dry Wild Rice (I use Sprout People) BLOOMED overnight in pure water (1/2 cup = 4 ounces)

1/2 – 1 cup – Sprouted Lentils (I like French Blue Lentils or Mung Beans)

NOTE on the Rice:

“Sprouted Wild Rice is the most tender of the rices. It is not actually a rice at all but an aquatic grass native to large parts of North America. After harvesting from lakes it is parched to preserve the grains so is not technically a living food, but when soaked in water it is delicious!”

Optional Base Ingredients

  • Chopped Romaine
  • Chopped Red Onions
  • Raw Sauerkraut
  • Diced Red Pepper
  • Minced Red Cabbage

Sauce

2 T. (1 ounce/30 grams) – Raw Tahini (or 4 t. Raw Sesame Seeds)

1/2 t. (2 grams) – Harissa spice

1 t. (4 grams) – Onion Powder

1 t. (4 grams) – Garlic Powder or Clove

1 t. (4 grams) – Dulse Flakes or tiny pinch of Celtic Sea Salt or splash of Coconut Aminos

1 t. (4 grams) – Smoked Paprika

2 – soaked, pitted Medjool Dates

1/2 – Lemon (OK to use pith)

1/2 cup (4 ounces) – Distilled Water

NOTE:

When I have to meet someone at a restaurant, I’ll sneak in a small tupperware full of this vegan bloomed rice, and order a side salad with NO dressing. Then just add this marinated mixture on top!

For those who don’t want to include this type of “rice” in their raw vegan diet – since it’s an aquatic grass – then I have one more “rice” recipe for you!

Raw Vegan Cauliflower Rice Recipe!

Raw vegan cauliflower rice is a simple and nutritious alternative to traditional or bloomed rice and is considered lower carb (for those who track macros).

Ingredients:

  • 1 medium-sized cauliflower head
  • Pepper to taste (optional – Celtic Salt for those who use salt)
  • Optional: Fresh herbs, spices, or additional vegetables for flavor

Instructions:

  1. Prepare the Cauliflower:
    • Wash the cauliflower thoroughly and remove the leaves.
    • Cut the cauliflower into smaller florets.
  2. Rice the Cauliflower:
    • Place the cauliflower florets in a food processor.
    • Pulse the cauliflower until it reaches a rice-like consistency. Be careful not to over-process, or it may turn into mush.
  3. Drain Excess Moisture (Optional):
    • Transfer the riced cauliflower to a clean kitchen towel or cheesecloth.
    • Squeeze out any excess moisture. This step is optional but can help improve the texture.
  4. Season:
    • Transfer the riced cauliflower to a bowl.
    • Season with pepper and any other desired herbs or spices. You can get creative here and add ingredients like garlic powder, onion powder, or fresh herbs for extra flavor.
  5. Serve or Store:
    • Raw cauliflower rice is ready to eat. Serve it as a base for salads, wraps, or bowls.
    • If you’re not using it immediately, store the raw cauliflower rice in an airtight container in the refrigerator. It can be kept for a few days.

Tips:

  • Experiment with different flavorings to suit your taste preferences.
  • You can mix in other vegetables like finely chopped bell peppers, cucumber, or tomatoes for added texture and flavor.
  • Always adjust the seasoning to your liking.

Keep in mind that raw cauliflower rice has a different texture than cooked rice, and its flavor profile is more fresh and crisp. This versatile ingredient can be a great addition to a raw vegan or plant-based diet.
