Use a variety of great flavors and toppings. Choose crunchy or chewy options to match your taste and mood!

Yields: 1 serving

Prep time: Only 5 minutes!

Chill time: At least 2 hours (best overnight)

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup raw, non-dairy “mylk” (almond or coconut work well) – can also mix with water
  • Two chopped Medjool dates or raw date sugar or organic stevia (sweetener of your choice)
  • Optional: 1/4 teaspoon vanilla extract (which technically is not raw)

Instructions:

  1. Combine ingredients: In a jar or container with a lid, combine the chia seeds, non-dairy milk, and sweetener you choose.
  2. Mix well: Stir or shake the mixture vigorously to ensure the chia seeds are evenly distributed and prevent clumping.
  3. Chill: Cover the container and put it in the fridge for at least 2 hours. It’s best to leave it overnight. This lets the chia seeds soak up the liquid and turn into a pudding-like texture.
  4. Serve: Give the pudding a good stir before serving. Add your favorite toppings and enjoy!

Adjust sweetness:  Taste and adjust the amount of sweetener to your liking.

Make it thicker: To get a thicker pudding, use more chia seeds compared to nut milk. For example, use 1/3 cup of chia seeds for every 1 cup of milk.

  • Chocolate: Add two tablespoons of raw cacao powder.
  • Vanilla cinnamon: Add 1/2 teaspoon ground cinnamon.

Ingredients:

  • 1 cup pitted Medjool dates (about 10)
  • 1/4 cup hot water
  • 1/2 cup raw sprouted buckwheat or raw oats
  • 1/2 cup raw nut butter (almond, sesame, cashew butter all work well)
  • 1/4 cup shredded, dehydrated coconut, plus extra for rolling (coating the balls)
  • One teaspoon of vanilla extract – optional
  • Optional: mini cacao nibs, sprinkles, chopped raw nuts or dried fruit

Instructions:

  1. Soak the dates: Place the pitted dates in a bowl and cover them with hot water. Let them soak for about 10 minutes to soften.
  2. Combine ingredients: Drain the dates. Add them to a food processor or blender. Include the oats, nut butter, coconut, and vanilla extract. Blend until a smooth dough forms, scraping down the sides as needed. If the mixture seems too dry, add a tablespoon of water until it comes together.
  3. Add mix-ins: Add optional ingredients like cacao nibs or chopped nuts.
  4. Roll into balls: Use a spoon or small ice cream scoop to form the dough into 1-inch balls. Roll the balls in the extra shredded coconut to coat.
  5. Chill: Put the balls on a baking sheet with parchment paper. Chill them in the refrigerator for at least 30 minutes to firm up.
